I'm looking at a QS Seamaster 250 for my 1988 70ft CPMY.
Is there anything I should be thinking about that isn't obvious?

I have never owned or run a boat with a stern thruster and don’t see the need for one on a twin diesel. Even the 116 I run these days doesn’t have one. You can move the stern just as accurately by splitting the gears. Bow thruster on a 70’? Sure but really no need for stern.

How quick you will find they have no customer service.

Try another manufacturer.

I appreciate that thought, and that's been my experience with my (old) 48.
This (new to me) boat is a 60 MY that was extended 10 ft, and the props and rudders are more 'forward' than a true 70 would have them. My thinking was that a stern thruster would give me more precise movement. Or it is just a thing where 'practice will make perfect' and I need to learn the idiosyncrasies of the boat?
 
Each boat reacts differently due to engine/wheels as well as controls (cable vs electronic / delay). I d try to practice before spending all that money. If anything the forward props should move the stern better
 
As Pascal says, practice before you spend a bunch of money. When I bought my 45c 4 years ago after running cruisers with twin double controls since 1979, I immediately bought a pair of new doubles, planning on replacing the single handle controls that it came with. I hated them. Well, this past summer I sold the ones I bought for half of what I paid for them. You get used to stuff
