I'm planning to put down 4x8 sheets of teak and holly flooring and am wondering about adding underlayment for soundproofing. Anyone have experience with this?

When I did mine, I just glued the sheets down and used a nice black throw rug that covered the engine hatch and I had no sound issues. Believe it or not, I used a soundown material headliner that cut down noise a bit.
 
Noise control is more efficient in the engine room. Adding a lead underlayment to deaden sound from the top may help but not as much as the engine room sound insulation
 
I used a product called Whispermat. A peel and stick 1/8" foam with mastic. It comes in 30" wide rolls. I used it under my T&G teak flooring in the saloon over the ER. Easy to use and seems to help with sound and cushion between teak and subfloor. It saved me from using an adhesive as I attached the floor with a nail gun. Found it on ebay.
 
If you do glue the finish flooring on, better be sure you keep it up...because when time comes for a change you'll have to removed and replace the plywood underlayment as well. The single biggest onstacle to keeping a floor like that in good shape is engine room repairs....tools, batteries,parts, grease,etc,etc,etc....

Is there a better way to put the 4x8 sheets with teak/holly veneer down than gluing? What about using silicone?
