Did you catch these yourself? If you did, what did you do with the claws once you removed them? Did you ice/chill/freeze them before cooking?
When you take the claws, they have to be cooked before chilling or freezing, or the meat will stick to the shells. My crab fishermen leave the claws in a bucket until the get to the dock where they'll cook them up, and then put 'em on ice.
